The carob tree is cultivated in the Mediterranean countries of Spain, Italy, and Morocco. The fruits look like green pods, and after harvesting, their color changes to reddish-brown. Carob powder in appearance is not much different from cocoa powder, and the taste is of cocoa with sugar. Carob powder is part of the spice category and is much sweeter than chocolate or cocoa. Unlike cocoa powder, carob powder is sweet in itself and does not require the addition of refined sugar when preparing sweets.
These spices are an ideal substitute for cocoa and sugar in chocolate and pastry products, not only due to its acceptable cost characteristics, but also to its organoleptic properties.
Carob powder is used for the production of dark and white glaze, without changing the original color and the smell of the final product. The use of carob also reduces the use of sugar, because the natural sweetness of carob is 0.50-0.60 of the sweetness of sugar. Carob powder is also used as a stabilizer and thickening agent. The spice is used as an ingredient for sauces and cakes, because it gives the product density, gloss and viscosity.
