Fennel comes from the Mediterranean area and spread northward in Europe and the Far East. There are two types of fennel: sweet fennel and bitter fennel. Bitter fennel is more common in America and is cultivated in Argentina, Central Europe, Germany, Hungary, India and Russia.

Fennel is a member of the Apinaceae family, which is also the parsley family, and the scientific name is Foeniculum vulgare mill. Fennel has oval seeds ranging in color from pale or bright green to brownish yellow and resembles the cumin seed family.
Fennel seeds, which are actually the fruits of this plant, represent the spice, which is subjected to a grinding process to produce ground fennel. It is a very popular spice in the Mediterranean area and is considered the fish herb by Italian and French chefs. The French use it in fish soups, dressings and in their most popular spice mixes. Italians like to add it to meatballs, pasta sauces, pizza or sausages. The Arabs use it to add flavor to bread and salads, while the Spanish prefer it in baked dishes.
For a better flavor, it is recommended that the fennel be added at the end of the cooking process.
