Black sesame is one of the oldest spices known to man. It is assumed that black sesame seeds came from India or Africa. The first written record about black sesame dates from 3000 BC.

Black sesame seeds have a fuller, slightly nuttier taste, with a stronger aroma than white or golden seeds.
The Japanese use black sesame to make a condiment called goma shio, which is sprinkled over rice, salads and vegetables. The Chinese use black sesame seeds to cover fried and caramelized apples and bananas. Black sesame is a spice often used by the Chinese in rice cakes, and chefs also have an excellent reputation for using this spice when preparing chicken and fish.
It is also lightly toasted and tossed in the dough for homemade candies, and artisan bakers mix black sesame seeds, poppy seeds and fennel, making a crust for baguettes. Prepared in the form of black sauce, it is good with beans, chicken, eggplant, fish, green vegetables, honey, lemon, noodles, rice, sugar and zucchini. It works well in combination with cardamom, chili powder, cinnamon, cloves, coriander, ginger, nutmeg, oregano, pepper, sumac and thyme. It is successfully used in the recipe for “Thai Basil” chicken soup.
