As a spice, thyme is used both raw and dried. Opinions are divided regarding dry or raw thyme, because the flavor is lost through drying, but new technologies allow better flavor retention for dry spices as well. Thus, ground thyme has become popular in most European kitchens.
Dried thyme is a spice that goes very well with most spices, with a strong, fresh, lemony aroma. It can be used in dishes based on beef, eggs, cheeses, along with paprika, garlic or oregano.
Also, ground thyme can be added to dishes based on sausages, chicken, lamb, potatoes, in sauces, soups, steaks and alongside vegetables.
